Chōjirō is a small, handmade Japanese sharkskin wasabi grater, also known as a samegawa oroshi. It is made for grating fresh wasabi root into a fine, creamy paste to enjoy with sushi, sashimi, soba, grilled fish, and other Japanese dishes.
The grating surface is made from carefully selected natural sharkskin, whose fine texture gently breaks down fresh wasabi. This traditional method helps bring out wasabi’s distinctive aroma, clean heat, and smooth texture. It can also be used for a small amount of fresh ginger.
Sharkskin graters have been part of Japanese food culture since the late Edo period, when fresh wasabi became an important accompaniment to sushi and soba. Chōjirō carries that tradition into the home kitchen in a compact, easy-to-store size.
Each grater is handmade in Japan with a base of Tono hinoki cypress from Gifu Prefecture. The warm wood, natural sharkskin surface, and simple shape make it a useful tool for a special meal, as well as a thoughtful gift for someone who loves Japanese cooking.
To use, move fresh wasabi over the sharkskin surface in a gentle circular motion. For best results, prepare only the amount you plan to enjoy right away.
